A creamy chicken soup from a neighborhood friend, Natalie Rogers.
Ingredients
- 3 (10 oz.) cans chicken broth
- 2 cups water
- ½ cup uncooked wild rice, rinsed or (Ben’s Wild rice)
- ½ cup finely chopped green onions
- 1 ½ cups cooked chicken
- 6 slices cooked, chopped bacon
- ½ cup butter
- ¾ cup flour
- ½ tsp salt
- 1/8 tsp pepper
- ¼ tsp poultry seasoning
- 2 cups half and half
Directions
- In a large pot, combine chicken broth and water.
- Add rice and onion and bring to a boil. Reduce heat. Cover and simmer 35-40 minutes. Rice should be tender.
- In a small pot, melt butter and flour, salt, poultry seasoning and pepper. Stir constantly until smooth and bubbly.
- Slowly stir in half and half. Cover over medium heat.
- Slowly mix small pot into large pot and stir constantly.
- Add chicken and bacon.
