One of my favorite recipes from Shayne Eliason!
Ingredients
- 4 oz. sliced bacon, cut into small pieces
- 2 TB butter
- 2 TB flour
- 4 cups chicken broth
- 1-2 large potatoes, peeled and diced
- 1 cup half and half
- 4 cups fresh corn
- 1 tsp pepper
- Salt, to taste
- 1 large red bell pepper, diced
- 3 scallions, diced
- Cilantro, chopped for garnish
Directions
- Cook bacon, chop, and set aside.
- Melt butter and add onions and cook for about 10 minutes.
- Add flour and cook, stirring, another 5 minutes.
- Add broth and potatoes.
- Continue cooking over medium-low heat until the potatoes are just tender, 12-15 minutes.
- Add the half and half, corn, pepper, and salt.
- Cook 7 minutes, stirring occasionally.
- Add the bell pepper, bacon and scallions, adjust seasonings, and cook an additional 5 minutes.
- Serve immediately, garnished with cilantro.
