Corn Chowder

One of my favorite recipes from Shayne Eliason!

Ingredients

  • 4 oz. sliced bacon, cut into small pieces
  • 2 TB butter
  • 2 TB flour
  • 4 cups chicken broth
  • 1-2 large potatoes, peeled and diced
  • 1 cup half and half
  • 4 cups fresh corn
  • 1 tsp pepper
  • Salt, to taste
  • 1 large red bell pepper, diced
  • 3 scallions, diced
  • Cilantro, chopped for garnish

Directions

  1. Cook bacon, chop, and set aside.
  2. Melt butter and add onions and cook for about 10 minutes.
  3. Add flour and cook, stirring, another 5 minutes.
  4. Add broth and potatoes.
  5. Continue cooking over medium-low heat until the potatoes are just tender, 12-15 minutes.
  6. Add the half and half, corn, pepper, and salt.
  7. Cook 7 minutes, stirring occasionally.
  8. Add the bell pepper, bacon and scallions, adjust seasonings, and cook an additional 5 minutes.
  9. Serve immediately, garnished with cilantro.
