This is such a good soup. Freezes well if you can’t finish. Recipe from Grandma Eliason.
Ingredients
- 1 lb. ground beef
- 1 onion, chopped
- 1 glove garlic, minced
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery sliced
- 1 cup purple cabbage, shredded
- 1 can (1 lb.) tomatoes
- 4 cups water
- 4 beef bouillon
- 1/2 tsp basil
- 1/2 tsp thyme
- 1 bay leaf
- 1/4 cup parsley
Directions
- Brown ground beef.
- Add onions, garlic.
- Add the remaining ingredients and bring to boil. Cover.
- Reduce heat and simmer 1 hour or until veggies are tender.
