Hamburger Vegetable Soup

This is such a good soup. Freezes well if you can’t finish. Recipe from Grandma Eliason.

Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 glove garlic, minced
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery sliced
  • 1 cup purple cabbage, shredded
  • 1 can (1 lb.) tomatoes
  • 4 cups water
  • 4 beef bouillon
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1 bay leaf
  • 1/4 cup parsley

Directions

  1. Brown ground beef.
  2. Add onions, garlic.
  3. Add the remaining ingredients and bring to boil. Cover.
  4. Reduce heat and simmer 1 hour or until veggies are tender.
