Karen Hendricks Lidtka nailed it out of the ballpark with this one! This soup is great any time of the year.
Ingredients
- 1 1/2 lbs. Italian sausage
- 1 medium onion
- 2 cloves garlic, minced
- 28 oz. Italian style tomatoes w/ liquid
- 16 oz. tomato sauce
- 8 cups water
- 2 medium zucchinis, diced
- 3 cups uncooked bowtie pasta
- 2-3 TB red wine vinegar
- 1 tsp basil
- 5 oz. parmesan cheese
Directions
- Sauté sausage until brown; drain fat.
- Add onion and garlic. Sauté until limp.
- Put in big cooking pot.
- Stir in tomatoes, breaking into small pieces.
- Add tomato sauce, beef broth, water, vinegar, and basil.
- Simmer 30 minutes.
- Stir in pasta, zucchini, parsley.
- Simmer 25 minutes.
- Garnish with parmesan cheese.
