Italian Sausage Soup

Karen Hendricks Lidtka nailed it out of the ballpark with this one! This soup is great any time of the year.

Ingredients

  • 1 1/2 lbs. Italian sausage
  • 1 medium onion
  • 2 cloves garlic, minced
  • 28 oz. Italian style tomatoes w/ liquid
  • 16 oz. tomato sauce
  • 8 cups water
  • 2 medium zucchinis, diced
  • 3 cups uncooked bowtie pasta
  • 2-3 TB red wine vinegar
  • 1 tsp basil
  • 5 oz. parmesan cheese

Directions

  1. Sauté sausage until brown; drain fat.
  2. Add onion and garlic. Sauté until limp.
  3. Put in big cooking pot.
  4. Stir in tomatoes, breaking into small pieces.
  5. Add tomato sauce, beef broth, water, vinegar, and basil.
  6. Simmer 30 minutes.
  7. Stir in pasta, zucchini, parsley.
  8. Simmer 25 minutes.
  9. Garnish with parmesan cheese.
