Linguine w/ Salmon in Cream Sauce

Catherine’s favorite.

Ingredients

  • 8 oz. dried linguine
  • 6 oz. cooked fresh salmon
  • 2 green onions, sliced
  • 1 clove garlic, minced
  • 1 TBS butter
  • 1 cup whip cream
  • 1 tsp dillweed
  • lemon zest
  • 1 tsp pepper
  • 2 TBS parmesan cheese

Directions

  1. Cook pasta according to directions and keep warm.
  2. Cut cooked salmon into thin bite-sized strips-set aside.
  3. For sauce, in a large skillet, cook butter, green onions, and garlic until tender. Add salmon and cook for 1 minute. Stir in whip cream, dill weed, lemon zest, and pepper. Bring to boiling, reducing heat. Cook at a gentle boil about 5 min. or until the sauce thickens slightly. Remove from heat. Stir in parmesan cheese.
  4. Arrange pasta on large platter. Spoon the sauce over pasta.
