A favorite (meatless) pasta dish from one of my high school friends, Holly Blomquist.
Ingredients
- 2 (6 oz.) jars marinated artichoke hearts
- 1/4 cup oil
- 2 cups chopped onion
- 2 TBS minced garlic
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1 tsp black pepper
- 1/2 tsp salt
- 1 (28 oz.) can tomatoes
- 1/4 cup parmesan cheese
- 1/4 cup chopped parsley
Directions
- Drain artichoke hearts, reserving oil.
- Heat olive oil. Add onion, garlic, oregano, basil, salt, pepper, and reserved artichoke oil. Sauté over medium to low heat.
- Add tomatoes and simmer 30 minutes.
- Add artichoke hearts, parmesan and parsley. Stir gently and simmer 5 minutes.
- Pour sauce over 1 lb. cooked pasta.
Variation: Can add grilled chicken
