Pasta Raphael

A favorite (meatless) pasta dish from one of my high school friends, Holly Blomquist.

Ingredients

  • 2 (6 oz.) jars marinated artichoke hearts
  • 1/4 cup oil
  • 2 cups chopped onion
  • 2 TBS minced garlic
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 (28 oz.) can tomatoes
  • 1/4 cup parmesan cheese
  • 1/4 cup chopped parsley

Directions

  1. Drain artichoke hearts, reserving oil.
  2. Heat olive oil. Add onion, garlic, oregano, basil, salt, pepper, and reserved artichoke oil. Sauté over medium to low heat.
  3. Add tomatoes and simmer 30 minutes.
  4. Add artichoke hearts, parmesan and parsley. Stir gently and simmer 5 minutes.
  5. Pour sauce over 1 lb. cooked pasta.

Variation: Can add grilled chicken
