A favorite marinade from Catherine. Can’t remember where I found it!
Ingredients
- 1/2 cup ketchup
- 1/2 cup soy sauce
- 1/2 cup sugar
- 1 tsp ginger
- 1 tsp garlic powder
- 2 lbs. boneless beef sirloin steak, cut into chunks
- pineapple, cut into 1-inch chunks
- 2-3 small zucchini, cut into 1-inch chunks
- 1/2 lb. whole mushrooms
- 1/2 lb. onions, cut into 1-inch chunks
- 2 red, yellow, or orange peppers, cut into chunks
Directions
- Combine 1st 5 ingredients and toss w/ beef. Cover overnight if time permits. Drain beef, reserving marinade.
- Thread meat and veggies onto skewers.
- Grill over hot grill for 15-20 minutes.
- Simmer marinade in saucepan over low heat for 15 minutes. Brush over skewers.
Serve with rice.
