Teriyaki Shish Kabobs

A favorite marinade from Catherine. Can’t remember where I found it!

Ingredients

  • 1/2 cup ketchup
  • 1/2 cup soy sauce
  • 1/2 cup sugar
  • 1 tsp ginger
  • 1 tsp garlic powder
  • 2 lbs. boneless beef sirloin steak, cut into chunks
  • pineapple, cut into 1-inch chunks
  • 2-3 small zucchini, cut into 1-inch chunks
  • 1/2 lb. whole mushrooms
  • 1/2 lb. onions, cut into 1-inch chunks
  • 2 red, yellow, or orange peppers, cut into chunks

Directions

  1. Combine 1st 5 ingredients and toss w/ beef. Cover overnight if time permits. Drain beef, reserving marinade.
  2. Thread meat and veggies onto skewers.
  3. Grill over hot grill for 15-20 minutes.
  4. Simmer marinade in saucepan over low heat for 15 minutes. Brush over skewers.

Serve with rice.
